Cook time: NA | Prep time: 10 mins | Serves: 3/4 cup

Ingredients.

  • 1 cup pitted dates

  • 150ml - 200ml coconut milk

  • 1 teaspoon ground ginger

  • 1 teaspoon ground cinnamon


Method.

1. Place pitted dates in a bowl and fill to cover dates with boiling hot water. Let steep for 5 minutes. 

2. Reserve 1 tablespoon of water and drain dates. Blitz the dates, reserved water, coconut milk, ground spices for 2 minutes or until smooth.

Cooking Notes: The spiced caramel sauce is wonderful with any dessert. Most of it will be used for the crumble but if you have any left it will last for 10 days in the fridge.
