Shaved Brussels Sprouts with AUTUMNCRISP® 
Grape, Herb and Goats Chevre.

Cook time: 15 mins | Prep time: 20 mins | Serves: 4-6

Ingredients.

  • 300g brussels sprouts, shaved with mandoline

  • 80 ml olive oil

  • 40 ml red wine vinegar

  • 2 teaspoons dijon mustard

  • ⅓ cup roughly chopped pistachios

  • 4 tablespoons finely sliced chives

  • 3 tablespoons finely sliced mint

  • ⅓ cup pepitas

  • 1 cup AUTUMNCRISP® grapes, halved

  • 1 lemon, zest and juice

  • 100g goats chevre

  • Salt and pepper to taste

Method.

1. In a small bowl add olive oil, red wine vinegar, mustard and season. Whisk well and set aside.

2. In a large bowl add brussels sprouts, pour over the dressing. Mix well to combine.

3. Add pistachios, chives, mint, pepitas, grapes, goats chevre, lemon zest and toss through.

4. Transfer into a serving bowl. Add lemon juice and a drizzle of olive oil. Season to taste and serve..
