Cook time: 20 mins | Prep time: 15 mins | Makes: 1.5 cup

Ingredients.

  • 4 granny smith small apples

  • 3/4 cup apple cider vinegar

  • 1 teaspoon of ginger, grated

  • 1 teaspoon of ground cardamon

  • 1/2 teaspoon of ground white pepper

  • 1 cinnamon stick

  • 1 star anise

  • 2 tablespoons of coconut sugar

  • pinch of salt

  • 1/2 cup of water

Rosemary sprigs to garnish

Serve with roast pork.


Method.

1. Peel and core the granny smith apples and cut into 1 cm cubes (roughly).

2. Place in a pot with apple cider vinegar, ginger, cardamom, white pepper, cinnamon stick, star anise, coconut sugar, and salt.

3. Place on the stovetop on low heat with a lid on. Simmer for 10 minutes and stir. Add the water and place the lid back on to simmer for another 10 minutes.

4. Take off heat. If it looks a little dry add 1/3 cup of water and stir in. Use cinnamon stick and star anise for garnish.

5. Serve on the side of roast pork or serve as an accompaniment with a block of cheddar cheese.

Cooking tips: Add a little water to dilute flavour a little.
