Cook time: 10 mins | Prep time: 15 mins | Serves: 10

Ingredients.

  • 3 eggs

  • 1/2 cup of monk fruit or any sweetener

  • 1 orange, zest only

  • 1 teaspoon of baking powder

  • 1 1/2 cups of almond meal

    Garnish

  • Chopped pistachios

  • Rose petals

  • Honey and a small piece of honeycomb


Method.

1. Preheat the oven to a 180°C fan forced (350°F). In a stand mixer place 3 eggs into the bowl and whisk for 1 minute.

2. Add the sweetener and whisk for 3 minutes on high. Add the zest, baking powder, and almond meal. Fold through until just combined.

3. Place into a mini bundt mold and place in the oven for 10 minutes.

4. Take out of the oven to let cool and carefully turn out onto a wire rack.

5. Once cool, place onto a serving platter. Drizzle honey on top of each bundt wreath, sprinkle finely chopped pistachios and rose petals. Place a small piece of honeycomb onto each wreath and serve.

Cooking tips:

You can use handheld beaters instead of a stand mixer. This mixture can be made into any shape - Mini cakes, 1 large cake, or madeleine molds.
