Ingredients.

  • 2 large, firm nectarines, thinly sliced into 0.5cm wedges

  • 1/2 cup walnuts, roughly crushed

  • 2 limes zest, juice and pulp

  • 1 large burrata ball

  • 10g basil leaves, thinly shredded

  • 3 tablespoons extra virgin olive oil. Extra to serve

  • sea salt and cracked pepper


Method.

1. In a medium bowl add the nectarines, crushed walnuts, lime zest, 40ml of lime juice, 2 teaspoon of lime pulp if available from the fruit. Add extra virgin olive oil, sea salt and cracked pepper to taste.

2. Mix well to combine, then place the burrata ball on top and gently split it open.

3. Top with shredded basil, drizzle extra virgin olive oil, sea salt and pepper to serve.
