Cook time: 25 minutes | Prep time: 10 mins | Serves: 4

Ingredients.

  • 1 side of trout, deboned, skin on

  • 2 tablespoons orange marmalade

  • 2 tablespoons mirin

  • 2 tablespoons soy sauce

  • 1 radicchio, thinly sliced

  • 2 tablespoons extra virgin olive oil

  • Salt and pepper, to taste

  • sliced cucumber to serve - optional


Method.

1.Preheat the oven to 180ºC (fan) and line a baking tray with baking paper. Lay the trout skin side down and set aside.

2. In a jar, combine the marmalade, mirin, and soy sauce. Secure the lid and shake well. Pour the mixture evenly over the trout and bake for 25 minutes.

3. Carefully lift the trout using two spatulas and transfer to a large platter. Top with sliced radicchio, drizzle with olive oil, and season with salt and pepper. Optional - add sliced cucumber on top.
