Lemon chicken with mushrooms and capers.
Cook time: 8 - 10 mins | Prep time: 5 mins | Serves: 2
Ingredients.
60g butter
4 chicken tenderloins
1 cup mushrooms, sliced
1/3 cup baby capers, with 1 tablespoon of brine
1 (50ml) lemon, juice
salt and pepper
Garnish:
parsley leaves
goats chevre
Method.
1. To a frying pan add butter, chicken tenderloins, mushrooms, capers, caper brine, lemon juice, salt and pepper.
2. Place on medium heat and simmer for 8 minutes, flip chicken tenderloins halfway.
3. Serve with fresh parsley, goat’s chevre, olive oil and season.
