Cook time: 3 mins | Prep time: 10 mins | Serves: 2

Ingredients.

  • 1 cup fresh ricotta, drained

  • 1 lemon, zest

  • 50g butter, unsalted

  • 1 tablespoon cinnamon

  • 1 teaspoon vanilla paste

  • 1/4 teaspoon sea salt

  • 1/4 cup coconut sugar

  • 2 firm plums, halved and pitted

  • grated dark chocolate to garnish


Method.

1. In a small bowl mix ricotta and lemon zest together until smooth. Set aside.

2. In a medium frypan on low heat add butter, cinnamon, vanilla paste, sea salt, coconut sugar. Stir and simmer on low for 1 minute until sugar is dissolved.

3. Add plums, cut side down. Stir and coat with cinnamon sugar liquid on low for 2 - 3 minutes.

4. On two plates evenly spread the lemon ricotta, place two plum halves on top of the ricotta and drizzle liquid over the top. Grate with dark chocolate and serve immediately.
