Cook time: 4 mins | Prep time: 5 mins | Serves: 3 (as a side)

Ingredients.

  • 150g green beans, top and tailed

  • 50ml olive oil

  • 2 garlic cloves, minced

  • 1 orange, zest and juice

  • 1/4 cup of raw almonds, roughly chopped

  • pinch of chilli flakes

Garnish:

  • mint leaves, olive oil


Method.

1. Get a frying pan on medium to high heat with olive oil. Place your beans, garlic, orange zest, orange juice and sea salt. Stir for 2 minutes.

2. Take off the heat and sprinkle in the almonds and chilli flakes.

3. Serve and add mint leaves, olive oil, salt, and pepper.

Cooking Notes:

Optional - 100g firm tofu - sliced into 0.5cm slices. Add when frying the beans.

To serve add a fried egg on top for a more substantial meal.
