sweet potato soup


RECIPE: Sweet potato soup - 4 ingredient soup.

Serves 6


3 large sweet potatoes - peeled and chopped roughly

2 onions - peeled and chopped roughly

1 litre of chicken stock. I use left over roast stock and top up with bought stock if I don't have enough.

2 tablespoons of honey

salt and pepper to taste.

optional: Do terra essential oil - to every 2 cups of soup put 2 drops of wild orange and 1 drop of ginger.


1. In a large saucepan on low heat, sautee onions with a tablespoon of olive oil for 5 minutes. Add the sweet potato, 1/2 cup of chicken stock and put the lid on to sweat for 15 minutes. 

2. Add the rest of the stock and simmer on low for 35 minutes with lid on. 

3. When soft, add honey and use a stick blender to achieve a smooth consistency. If you would like to add a little butter, stir 1 level tablespoon once smooth.

4. To serve you can add crispy proscuitto, orange zest with salt and pepper to taste.
