Recipe: Mum's Bolognese. Will make 6-8 servings. I always freeze a few containers of bolognese and have them ready to go for easy weeknight meals.
1kg Grass fed beef mince
2 cloves of crushed garlic
1 brown onion - diced
1 teaspoon of mild curry
1/2 teaspoon of mixed spice
1/2 teaspoon cinnamon
1 teaspoon brown sugar
1 teaspoon of tomato paste
1 cup of red wine
1 cup of beef stock
2 tins of crushed tomatoes (keep 1 tin)
Salt to taste
1. In a large fry pan, on medium heat, brown the beef mince and then transfer into a bowl with all the juices
2. In the same fry pan, add some olive oil, put the onion in and cook down until translucent. Then add the garlic, mild curry, mixed spice, cinnamon, brown sugar and stir to combine for 1 minute. Add tomato paste and stir for another minute.
3. Add red wine to the fry pan, simmer down to burn off alcohol, 1 minute, then add the cooked mince with juices, beef stock and crushed tomatoes. Stir to combine for 10 minutes. Fill 1 tomato tin full of water and add to the bolognese and add a pinch of salt. Reduce heat to low and cook for 30 minutes, stirring in between. Lid off.
4. After 30 minutes add another 1 1/2 tomato tin's of water and cook for another 1 hour. Stirring throughout with the lid on. You may need another 1/2 a tomato tin of water if the sauce thickens too much.
It's very old school measuring in 'tomato tin' quantities, but that's what I love about our family recipes. Recipe's come from memory and not written down.
