Caramelised squash, onion and capsicum with buckinis
RECIPE: caramelised squash, onion and capsicum with buckinis
4 squash quartered
2 brown onions cut in half and then into 6-8 wedges
2 small capsicums sliced in half and then into 4 pieces
1 tablespoon ground cumin
1 good pinch of sea salt
30ml extra virgin olive oil
fresh oregano or mint to serve
Heat oven to 160C and line a baking tray with parchment paper.
Cut up vegetables so they are all similar in size. Mix gently with your hands in a large bowl with the cumin, sea salt and olive oil.
spread out onto baking tray and place on the bottom shelf for 30 minutes. After 30 minutes give the vegetables a good mix around and cook for another 20 - 30 minutes.
Take out off the oven and let cool for 2 minutes. Add 1/2 cup of buckinis, @lovingearth brand, over the top with a handful of fresh oregano or mint. And serve.
Buckinis can be used to top your yogurt or breakfast smoothie bowls and in all salads. Just put straight on top or gently heat over stove top in milk or water to soften.
