Salmon fish cakes.


Cook time: 6 mins | Prep time: 15 mins | Serves: 10

Ingredients.

  • 2 cups of cooked Atlantic salmon

  • 1/4 cup shallots finely chopped

  • 1/4 cup fennel fronds finely chopped

  • 2 eggs

  • 3 chat potatoes parboiled and skin removed.

  • 1 lemon zest only

  • 100ml olive oil

  • Salt and pepper


Method.

1. Add flaked salmon to a large bowl along with shallots, fennel fronds, eggs, mashed potatoes, and lemon zest. Add a good amount of salt and pepper and mix to combine all the ingredients.

2. Use two dessert spoons to mold patties. Get a frypan on medium heat with olive oil to shallow fry.

3. Add patties to frypan and lightly press down. Cook for 2 -3 minutes on each side. Transfer to a plate with a paper towel to absorb excess oil.
Serve with sour cream, squeeze of lemon, and extra sea salt.
