Salmon fish cakes.

Ingredients.
2 cups of cooked Atlantic salmon
1/4 cup shallots finely chopped
1/4 cup fennel fronds finely chopped
2 eggs
3 chat potatoes parboiled and skin removed.
1 lemon zest only
100ml olive oil
Salt and pepper
Method.
1. Add flaked salmon to a large bowl along with shallots, fennel fronds, eggs, mashed potatoes, and lemon zest. Add a good amount of salt and pepper and mix to combine all the ingredients.
2. Use two dessert spoons to mold patties. Get a frypan on medium heat with olive oil to shallow fry.
3. Add patties to frypan and lightly press down. Cook for 2 -3 minutes on each side. Transfer to a plate with a paper towel to absorb excess oil.
Serve with sour cream, squeeze of lemon, and extra sea salt.
