Prawn Salad.


Cook time: NA | Prep time: 20 mins | Serves: 2-3

Ingredients.

  • 700g of cooked sweet prawns, not peeled (cut into 2cm pieces)

  • 2 celery sticks, diced finely

  • 2 tablespoons of chopped parsley

  • 1/4 cup of whole egg mayonnaise

  • 1 tablespoon of basil pesto

  • 1/2 lemon, juice

  • salt and pepper to taste


Method.

1. Peel and cut your prawns into 2cm pieces. Add to a bowl with celery, parsley, egg mayonnaise, basil pesto, lemon juice, and salt and pepper.

2. Mix to combine and serve on a soft roll, wrap, lettuce leaf, or pocket pita bread.
