Mushroom, tofu and shallot noodles.


Cook time: 5 mins | Prep time: 5 mins | Serves: 2

Ingredients.

  • 2 x 75g packets of 2 minute noodles

  • 1 litre chicken broth

  • 100g firm tofu, cut into 1cm cubes

  • 6 button mushroom, cut into 1/4’s

  • 3 shallots, finely chopped

Garnish:

  • chilli flakes

  • soy sauce


Method.

1. Bring the chicken broth to a boil in a medium saucepan. Turn down to a light simmer and add the noodles, tofu and mushrooms.

2. Simmer, mix through and cook for 5 minutes.

3. Serve in two bowls and sprinkle with shallots, chilli flakes and soy sauce.
