Fruit and nut balls.


Cook time: N/A | Prep time: 25 mins | Serves: Makes 15

Ingredients.

  • 130g dried cranberries

  • 130g raw whole almonds

  • 90g dried whole apricots

  • 2 tablespoons melted organic coconut oil

  • 2 teaspoons orange zest

  • 2 tablespoons puffed amaranth


Method.

  1. Blend/pulse cranberries, almonds, apricots until fine but not a paste then add the coconut oil and orange zest. Pulse just to combine.

  2. Roll into 15 balls. Place puffed amaranth into a bowl and roll the balls in the puffed amaranth. Press the amaranth on the balls and refrigerate.


NOTE: Will last in the fridge for up to 4 weeks.
