Citrus baked fish with zucchini and baby capers.


Cook time: 20 mins | Prep time: 10 mins | Serves: 4

Ingredients.

  • 500g boneless white fish, snapper, cod or basa fillets

  • 1/4 cup baby capers

  • 3 zucchini, sliced into 1 cm coins

  • 1 orange, zest and juice

  • 1 lemon, zest and juice

  • 1 tablespoon dried oregano

  • 1/2 teaspoon cracked pepper

  • 40g butter or plant-based butter

Garnish:

  • 2 sprigs of fresh dill

  • Extra virgin olive oil

  • salt to taste


Method.

1. Preheat oven to 180°C fan forced (350°F). In a 30cm baking dish place the fish fillets onto the base. Add the sliced zucchini, orange zest and juice, lemon zest and juice, dried oregano, cracked pepper and butter.

2. Bake in the oven for 20 minutes or until the fish is white and falls away easily (the bake time may vary depending on the thickness of the fish).

3. Serve with dill and a good drizzle of olive oil. Add salt to taste.
