Avocado and basil pasta with Melrose Essential Greens.


Cook time: 10 mins | Prep time: 20 mins | Serves: 2

Ingredients.

  • 200g pasta of choice

  • 2 medium avocados

  • 1⁄4 cup olive oil

  • 2 tsp Melrose Essential Greens @melrosehealth

  • 2 cups basil, fresh

  • 2 cloves garlic, crushed

  • 1⁄2 lemon, juiced

  • 1⁄4 cup nutritional yeast

  • Salt and pepper to taste


Method.

1. Prepare the sauce by combining avocado, olive oil, greens, basil, garlic, lemon, nutritional yeast, and salt and pepper in a blender or food processor. If it is not combining, add a touch
more olive oil.

2. Bring a medium pot of water to a boil. Plunge in the pasta and cook according to packet instructions. Drain and add to a large bowl.

3. Add the prepared sauce to the pasta and toss to combine.
