Almond and banana cake.


Cook time: 45 mins | Prep time: 15 mins | Serves: 8

Ingredients.

  • 3 bananas, ripe

  • 2 cups of almond meal

  • 1/4 cup coconut sugar

  • 1 teaspoon of cardamom or cinnamon powder

  • 1/4 cup of rice flour or coconut flour

  • 1 teaspoon of baking powder

  • 2 eggs

  • 1/4 cup olive oil


Method.

1. Preheat oven on 180°C fan forced (350°F). Lightly grease and line a loaf tin.

2. In a blender or food processor place all the ingredients and blend until smooth.

3. Place in a greased loaf tin and bake for 40 minutes until the skewer comes out clean.

4. Let cool and serve.
