poached quince pavlova with mascapone cream 

 
 

RECIPE: Poached Quinces
INGREDIENTS: 
4-5 quinces peeled, core out and and cut into wedges.
2 cups of red wine
1 cinnamon quill
3 star anise
1/2 cup coconut sugar
1 tablespoon vanilla bean paste

1/2 lemon
METHOD:
1. In a saucepan put all the ingredients in and put on medium heat. Fill pot with water so it covers quinces. Simmer for 1 hour or until soft. 
2. Leave quinces in syrup/liquid overnight, refrigerated. Then store quinces in an airtight container. Keep some syrup it’s delicious on granola/ porridge etc .

RECIPE: Mascarpone cream
INGREDIENTS: 
600ml cream
1 teaspoon vanilla bean paste
2 tablespoons mascarpone
METHOD:
1. In a mixer whip cream with vanilla bean paste until soft peaks form. Add mascarpone and whip gently until combined. 
NOTE: You can make everything one/two days ahead, then put it together in a few minutes on the day
