Hierloom Tomato, Halloumi and herb salad

 
 

RECIPE: Heirloom Tomato, Halloumi and Herb salad - serves 2

INGREDIENTS:

3 Heirloom tomatoes 

Handful of cherry tomatoes - some cut in half some whole. 

Halloumi cheese 250g - slice into 1 cm pieces (Pitta's is the brand I use)

1/2 Lemon

1 Handful of basil - torn

1 Handful of mint - torn

3 sprigs of dried oregano

Dressing:

4 tablespoons Extra virgin olive oil

2 tablespoons Red wine vinegar

Salt and pepper

METHOD:

  1. Chop tomatoes into rough chunks. Add basil, mint, oregano and toss.
  2. Mix together the olive oil and red wine vinegar with salt and pepper and add into salad.
  3. Lightly oil a fry pan on medium heat and fry up Halloumi slices until golden brown. Squeeze half a lemon over Halloumi whilst cooking. Serve Halloumi straight away with tomatoes.
