RECIPE: My Granola. Makes 16 cups


1kg rolled oats

170g puffed rice (in gluten free section @colessupermarkets )

400g roughly chopped almonds

400g roughly chopped walnuts or macadamias

2 tablespoon of cinnamon

1/2 cup of honey

1/2 cup of coconut oil - melted

1/2 cup of date syrup - health section at woolworths.

3/4 cup of chia seeds

150g coconut flakes/ shredded coconut

150g roughly chopped dates

1/2 cup of flaxseeds

1/3 cup Psyllium Husk


  1. Preheat oven to 160C. Get a large bowl and add oats, puffed rice, chopped almonds, walnuts, cinnamon, honey, coconut oil, date syrup, chia seeds and a pinch of salt. Mix through to combine.

  2. Get 1 extra large baking tray and pour contents of bowl in. evenly distribute and put into the oven for 40 minutes on the bottom shelf.

  3. Stir mix 3 times throughout the 40 minutes and turn baking tray around each time so the heat is evenly distributed.

  4. Once golden brown take out of oven and top with chopped dates, shaved coconut, flaxseeds and psyllium husk. Mix through to combine, let cool and decanter into an airtight glass jar or container.

NOTE: If you use two smaller baking trays the mix will cook quicker so keep an eye on it and rotate trays from top to bottom shelf in the oven. Will take approx. 30 minutes.
