egg + cauliflower

RECIPE: Egg and Cauliflower. 

My mum and grandmother always made these. I don't think it is exactly the same but nonetheless it's still totally delicious and you could totally eat the whole plate. 

INGREDIENTS:

1/2 cauliflower with florets cut off. If large cut in half.

4-5 eggs

salt and pepper

1 tablespoon of grated parmesan 

ghee for frying

METHOD:

1. In a pot of boiling salted water, put the cauliflower in and parboil. This will take 5 - 8 minutes

2. In a bowl lightly beat eggs. Add to bowl pepper and parmesan to mix and combine. 

3. Drain cauliflower and set aside. In a fry pan bring to a medium heat and add a little ghee or butter. Have ready a plate with paper towel on top.

4. When fry pan is hot dip cauliflower into egg mixture and then into the fry pan. Fry until cauliflower is golden brown on most sides and drain on paper towel. Add a little olive oil and salt to serve.

Delicious as a snack and you can eat hot or cold. Add them to salads, frittata's or as a side.
