corn Fritters

Corn Fritters with Capsicum and Lime - Makes 14

INGREDIENTS:

3 corn cobs with kernels sliced off

1 red capsicum - diced

1/4 cup Flat leaf parsley - chopped finely

3 shallots - finely chopped

5 free range eggs

2-3 tablespoons gluten free plain flour

1/2 lime - juice and zest

2 pinches of sea salt

METHOD:

  1. Into a large bowl put all the ingredients and combine.
  2. Heat a frypan on medium heat. Coat the base of frypan with grapeseed oil so you shallow fry the fritter's. When pan is hot put a tablespoon of fritter mix in frypan and cook for 3 minutes on each side. When cooked, set fritter's aside on a plate with paper towel
