corn Fritters


Corn Fritters with Capsicum and Lime - Makes 14


3 corn cobs with kernels sliced off

1 red capsicum - diced

1/4 cup Flat leaf parsley - chopped finely

3 shallots - finely chopped

4 free range eggs

2 tablespoons gluten free plain flour

1/2 lime - juice and zest

2 pinches of sea salt


  1. Into a large bowl put all the ingredients and combine.
  2. Heat in a frypan grapeseed oil on low to medium heat. Use a tablespoon to dollop fritter mix into frypan and cook for 2 minute on each side.

NOTE: Sometimes I add half a chilli to mix if it's not for the kids ;)
