Chicken, mango and kale salad

A fun way to serve up this delicious healthy summer salad. 
Serves 1 for a main or 2 for entree


INGREDIENTS:
1/4 cup whole egg mayonnaise
1/2 teaspoon mild curry powder
1 tablespoon organic apple cider vinegar
2 kale leaves, washed + ripped into small pieces, stalk removed
1 cup chicken tenderloin, shredded (or if you don’t want to cook use a BBQ chicken)
1 fresh mango cheek, diced. Reserve another slice for garnish. 
1/2 cup cucumber, diced
1/4 cup macadamia’s, roughly chopped
1/2 lime, juiced and zest reserved for garnish


METHOD:
1. Mix shredded chicken with mayonnaise (reserve 1 teaspoon of mayo for base of salad), curry powder and lime juice and season. set aside.
2. Toss the kale with apple cider vinegar and set aside.
3. Start layering into glass with a teaspoon of mayonnaise, half of the dressed kale leaves, half chicken, all the mango with some zest on top. Next the cucumber, and repeat until ingredients are finished. Top with macadamia’s.
4. Garnish with mango slice, slice of cucumber and zest.
