BANANA AND WALNUT MINI CAKES
RECIPE: Banana and Walnut mini cakes - Refined Sugar Free
4 Banana's - over ripe and mashed
3 Free range eggs
1 teaspoon and vanilla paste
1/2 cup coconut oil - melted
1/2 cup of rice malt syrup
1 teaspoon cinnamon
1 1/2 cups plain flour - sifted
2 teaspoons of baking powder
1 cup of walnuts - chopped
1. Preheat oven to 170C
2. In a large bowl put in mashed banana's, eggs, vanilla paste, coconut oil, rice malt syrup and cinnamon. Stir to combine.
3. Add sifted flour, baking powder and chopped walnuts. Stir to combine.
4. Get an 8 rectangle hole baking tray or 12 hole muffin tray and use spray oil. Distribute evenly and cook for 30 minutes on 170C.
